Honey Processed
The Koke washing station has over 2,000 small scale farms who bring their cherries for processing. Most of them are multi-generational family farms. Koke Honey is full mucilage (or black honey) processing. Coffee rests in the picking sacks for a day prior to cherry removal, giving the final cup extra fruity flavors.
